Oatmeal Carrot Cake Cookies
This dessert satisfies that carrot cake craving we all know too well. These cookies combine oats, carrots, and maple syrup to become a delicious baked treat. Great for dessert, a snack, or even breakfast, these beauties will become a staple in your kitchen.
Oatmeal Carrot Cake Cookies
Makes 12 cookies
Ingredients
1 C instant oats
3/4 C flour
1 1/2 t baking powder
1 1/2 t cinnamon
3 T butter, softened
1 Pat's Pastured egg
1 1/2 t vanilla extract
1/2 C Mount Cabot Maple Syrup
3/4 C shredded carrots
Pinch of salt
Method
1. Preheat oven to 325°F.
2. In a bowl, whisk together oats, flour, baking powder, cinnamon, and salt.
3. In another bowl, whisk together butter, egg, and vanilla. Add in maple syrup.
4. Slowly add the dry ingredients to the egg mixture. Stir in carrots.
5. Allow dough to chill in refrigerator for 30 mins - 1 hr.
6. Form dough into balls, then place on parchment-lined baking sheet.
7. Bake for 12-15 minutes.
8. Let cool and enjoy!
